SPINACH QUICHE 
5 eggs
1 pt. half and half
1/2 lb. bacon
4 oz. shredded Swiss cheese
4 oz. shredded cheddar cheese
Small bunch scallions
1 (10 oz.) pkg. frozen spinach, steamed and well drained)
3 tbsp. flour
1 (9 inch) pie crust
Handful of fresh mushrooms
Dash cayenne pepper

Fry bacon in skillet until crisp. Spread crust in 2 inch deep casserole dish. Crumble bacon on top crust. Fry onion in bacon renderings. Spread cheese on top of bacon. Whisk eggs in 2 quart saucepot. Add half and half. Add 3 tablespoons flour and whisk. Add drained spinach and onion. Pour into pie crust. Slice mushrooms on top. Add dash of pepper.

Bake at 400 degrees for 15 minutes. Bake at 350 degrees for 50 minutes. Let cool 10 minutes before serving.
