SPINACH FILLING FOR RAVIOLI 
1/2 c. ground beef chuck
1/4 c. well-drained chopped cooked spinach
2 eggs, slightly beaten
1/4 c. grated Parmesan cheese
2 tbsp. finely chopped parsley
1/3 c. fine dry bread crumbs
1/4 tsp. salt
Dash of pepper

Cook meat in skillet, stirring with fork to break it up, until it loses its color. Drain off excess fat and mix with remaining ingredients. At this point, instead of hand beating, a meat grinder would do a fine job. Cool before using. Makes 1 3/4 cups filling.
