TOMATOES FILLED WITH SPINACH 
1/2 tomato per person
1 box frozen chopped spinach for 4
1/2 pt. sour cream for 4 OR Hollandaise sauce
Swiss cheese (optional)

Halve the tomatoes and scoop out pulp. Cook and drain spinach. Mix spinach with either sour cream or Hollandaise and fill tomato halves. Tomatoes may be topped with grated Swiss cheese. Bake for about 30 minutes at 300 degrees. (This may be prepared in advance and refrigerated). NOTE: Especially good with grilled swordfish.
