FANCY STUFFED PORK CHOPS 
6 (1 - 1 1/2 inch) pork chops, with pockets
3 tbsp. butter
1 tsp. minced onion
1/4 c. sliced mushrooms
1/2 c. (3 - 4 oz.) crumbled blue cheese
3/4 c. fine dry bread crumbs or 4 slices white bread, broken
Dash salt

Melt butter in skillet, add onion and mushrooms. Saute 5 minutes. Remove from heat and stir in blue cheese, bread crumbs and salt. Let the blue cheese melt down before adding regular bread. Stuff pork chops and secure with toothpicks. Bake at 325 degrees for 1 to 1 1/2 hour, depending on size.
