HERBED VINEGARS | |
Red or white wine vinegars Fresh or dried sprigs of herbs Peeled garlic cloves (1 or 2 per bottle) Peppercorns (optional) 1. Wash and dry glass containers for vinegar. Make certain bottles are clean and have close fitting corks or stoppers. Be certain vinegar will not contact any metal. 2. Bring vinegar to a boil. 3. Put garlic and peppercorns in bottom of bottle to prevent floating. 4. Arrange herbs attractively in bottle. Suggested herbs: parsley, basil, dill, mint, oregano, savory, thyme, tarragon or chives. (Use herbs alone, or combine for variety.) 5. Pour vinegar over herbs in bottle. 6. Let sit in darkened basement for at least 1 month. Nutritional analysis not available. |
