STIR FRIED PEPPERS AND TOMATOES 
4 green peppers, coarsely chopped
1/3 c. oil
4 cloves garlic, minced or sliced
3 large tomatoes, coarsely chopped
1/2 tsp. salt
1/2 tsp. pepper

Cook peppers in oil in a skillet over medium heat, stirring often, about 10 minutes or until lightly brown. Add garlic and cook another minute. Stir in tomatoes, salt and pepper. Cook for about 15 minutes or until slightly thick, stirring often.
