ZUCCHINI PIZZA CASSEROLE 
4 c. shredded zucchini
1/2 tsp. salt
1 c. shredded Cheddar
1 c. shredded mozzarella
2 oz. Parmesan cheese
2 eggs
1 (10 oz.) can pizza sauce
1 lb. ground beef
1 c. green pepper
1/2 c. onion, chopped
2 (4 oz.) cans mushrooms

Sprinkle salt on zucchini. Let stand 10 minutes. Squeeze. Combine 1/2 the shredded cheeses, eggs and zucchini and all Parmesan. Press into greased 9 x 10 inch pan. Bake at 400 degrees for 20 minutes. Brown meat and onions. Stir in sauce, bring to boil 2-3 minutes. Spoon over baked crust. Top with chopped pepper, mushrooms and whatever pizza fixings you like. Sprinkle with remaining cheese. Bake 25-30 minutes. Freezes well.
