ZUCCHINI PIZZA 
4 lb. zucchini, grated
1 tsp. salt
2 tbsp. olive oil
1 egg
1/2 c. Cheddar cheese
1 tsp. pepper
1 med. onion, finely chopped
Pizza sauce
1 tsp. oregano
1/2 c. Parmesan cheese, shredded
1 c. Mozzarella cheese
Your favorite pizza topping (I use sausage, pepperoni, mushrooms, green pepper)

Cut ends off zucchini and grate. Put in colander and sprinkle with salt. Let stand for 30 minutes. Squeeze water out of zucchini with hands. When quite dry, saute in oil for 5 minutes. Cool. Mix zucchini with egg, Cheddar cheese and pepper. Press mixture into 8-inch pie pan or casserole; bake at 400 degrees for 15 minutes. Cool; cover with pizza sauce, sprinkle with cheese and toppings. Bake at 350 degrees for 20 minutes. Serves 4-6.
