OATMEAL WAFFLES 
2 cups milk
2 cups old-fashioned oatmeal
1/2 cup all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
1 tsp. sugar
2 eggs, separated
1/4 cup (1/2 stick) butter, melted

Bring milk almost to a boil. Add oatmeal (rolled oats are the best for this recipe - not quick-cooking!). Let stand till cool (about 1 hour) stirring occasionally.

Mix together, flour, baking powder, salt and sugar.

Beat egg whites until stiff peaks form.

Beat egg yolks in mixer. Add butter and mix; then add cooled oatmeal mixture. Add dry ingredients. Lastly, by hand, fold in beaten egg whites. Pour batter in hot waffle iron.

Variation: add a bit of oat bran or wheat germ to oatmeal mixture for more texture and flavor. Also, sprinkle waffle batter (before closing iron to cook) with 1 tablespoon sunflower seeds for an excellent "nutty" flavor!
