HARUSAME SALAD 
5 thin slices ham, cut into strips
70-80 grams Harusame (Japanese) noodles
1 English cucumber, cut into fine strips
2 eggs

Beat eggs and make thin fried sheets, cool, cut into strips.

Cook harusame in boiling water for 2-5 minutes, just until tender. Drain and rinse in cold water to stop cooking process. Mix with other ingredients and chill.

SAUCE:

1/3 c. Japanese rice vinegar
1/3 c. oil (1/2 vegetable & 1/2 sesame)
2 tsp. sugar
2 tsp. soy sauce
1/2 tsp. salt, optional

Mix all ingredients for sauce by beating well with a whisk. Chill. Add sauce to salad and toss just before serving.
