VEGETABLE PILAF 
1/2 c. chopped onion
1 sm. can drained mushrooms
1 c. uncooked rice
1 (16 oz.) can chicken broth
1/2 c. chopped tomatoes
1/2 c. zucchini, chopped

Saute onions and mushrooms one minute. Add rice, stir one minutes. Add chicken broth. Cook until rice is tender. Add tomatoes and zucchini. Cover, cook 10 minutes. Let stand 5 minutes before uncovering.
