RICE PILAF 
1 c. Spanish onion, peeled, diced fine
1/4 c. vegetable oil
2 c. rice
4 c. chicken broth
1/2 c. ham, trimmed, diced fine
1 c. snow peas, trimmed, blanched, julienned

Saute onions in a saucepan with oil until tender. Add rice and coat well with oil by stirring for 2-3 minutes. Add ham and chicken broth; bring to a boil. Then simmer tightly covered until rice is tender, about 30-40 minutes. Add snow peas; mix well and serve. Serves: 6.
