ZUCCHINI AND TOMATOES 
1 small onion, chopped
2 tbsp. olive oil
2 medium zucchini, diced
2 large tomatoes, diced
1 tsp. dry basil or 1 tbsp. fresh chopped basil

Sauté onion and zucchini in olive oil over medium heat until zucchini starts to be tender. Add the tomatoes and basil. Stir and cook just a few seconds to heat the tomatoes. Cover and turn off the heat. Be careful not to overcook the zucchini.
