LIME CHIFFON PIE 
1/2 pkg. lime gelatin (4-serving size)
1 c. evaporated milk (ice cold)
1/4 c. sugar
1/2 c. boiling water
1 lime rind, grated
Juice of 1 lime and water to make 1/4 c.

Blend gelatin mix and sugar. Add water and stir until dissolved. Stir in lime rind, juice, and water. Chill until consistency of unbeaten egg white. Stir occasionally. Whip chilled milk until it is stiff and holds a peak. Fold into gelatin. Pour into a graham cracker shell. chill.
