MEXICAN DIP 
1 lb. ground beef
1 can whole kernel corn, drained
1 lb. cheese (Velveeta)
1 can Ro-Tel
1 taco seasoning mix
1 c. rice
1 onion, chopped

Brown ground beef and onion. Put corn, Ro-Tel, taco mix and cheese in pan and cook to melt cheese. Mix rice with cheese mixture, then add meat and onions. Mix well and put in slow cooker to keep hot to serve.

Double this to make slow cooker full.
