MICROWAVE HOT MEXICAN BEAN DIP 
1 lb. lean ground beef or ground turkey
1 med. green pepper, chopped
1 (1 1/4 oz.) pkg. taco seasoning mix
2 c. shredded Cheddar cheese (or Formagg)
1 (16 oz.) can vegetarian refried beans
1 (8 oz.) can tomato sauce
1 (4 oz.) can green chilies, chopped
Sliced green onions to taste
Sour cream (optional) (or imitation)

Crumble beef in 2 quart glass casserole. Stir in green pepper and taco mix. Cover and microwave on high 5 to 6 minutes, stirring to break meat apart. Stir in cheese, beans, tomato sauce, and chilies. Microwave on high 5 to 9 minutes or until hot and cheese melts, stirring twice. Garnish with green onions and sour cream. Serve hot with tortilla chips or corn chips. Makes about 5 1/2 cups. Freezes well.

Since microwave ovens vary in power, you may need to adjust your cooking time.
