POTATO CASSEROLE 
1 (30 oz) pkg frozen, shredded hashbrowns, thawed
2 cups sour cream
2 cups sharp cheddar cheese, shredded
1 can cream of mushroom soup, undiluted
1/2 cup green onions, chopped
1/4 cup butter, melted
1/2 tsp pepper
salt to taste
cooked bacon or cubes of ham (optional)

In large bowl, combine all ingredients, reserving 1/2 cup cheese. Pour into well greased 2 quart baking dish.

Bake uncovered at 350°F for 45 minutes. Remove from oven and sprinkle reserved cheese over top. Continue to bake for about 15 minutes or until cheese is completely melted.

Yield: 8 - 10 servings.
