POTATO CASSEROLE 
1 (2 lb.) pkg. southern-style hashbrowns
1 c. sour cream
1 can cream of mushroom soup
1 sm. chopped onion
1 stick butter, melted
1 to 2 c. shredded cheddar cheese
1 tube Ritz crackers, crushed & mixed w/1 stick melted butter

Mix all together. Top with buttered Ritz crumbs. Bake 1 hour in 350 degree oven.
