ITALIAN PIZZELLES 
6 eggs
3/4 c. sugar
Pinch of salt
1 tsp. pure anise oil
3/4 c. oil
2 1/2 c. flour
2 1/2 tsp. baking powder

Beat eggs with electric mixer; add sugar and oil and anise oil. Sift flour, baking powder and salt. Slowly add to egg mixture. Use electric pizzelle iron. Drop batter by the teaspoon onto center of each cookie section. Close lid and allow to cook 45 to 60 seconds until lightly brown. Cool on wire racks or on paper towels. When completely cooled, store in tins.

My grandmother and I made these cookies all the time, I lost the recipe but found it here. The other recipes say make with butter, those are incorrect recipes, pizzelles aren't anything like regular cookies!! Thanks so much, this brings back great memories of my grandmother and I.
