GREEK SALAD 
1 head lettuce
2 green onions, chopped
1 cucumber, sliced
1 green pepper, cut in strips
Feta cheese, crumbled or cut in sm. chunks
Calamata olives
Anchovy fillets
1/2 tsp. oregano
1 tomato, sliced

DRESSING:

2/3 c. olive oil
1/3 c. wine vinegar
1 tsp. salt
1/4 tsp. pepper
1 tsp. oregano
1 clove garlic, crushed or powder

In large salad bowl toss together onions, cucumber, tomato and green pepper. Add feta cheese and olives. Combine dressing ingredients. Toss with salad ingredients. Let marinate for 2 hours. Add lettuce with marinated ingredients. Top with anchovy fillets. Sprinkle with oregano. If you add lettuce too early, it will be soggy.
