QUICK AND EASY CHICKEN WITH RICE 
1 c. rice, instant or regular
6 chicken breasts
1 can mushrooms with liquid
2 c. water
1 pkg. onion soup
1 can mushroom soup or celery soup

I like the substitution of tart-tasting mayonnaise so I add 1/2 cup to the soup before layering. Then I reduce the water to 1 3/4 cups.

Grease a 9 x 13 inch casserole. Sprinkle rice in the bottom. If using regular rice instead, cook by package directions for only 10 minutes and then drain. Layer the rest of ingredients onto the rice. Lay chicken on top. Bake 1/2 hour at 350 degrees. Baste chicken occasionally and add more water if necessary. Cover with foil and bake 1/2 hour more.
