BAKED FISH (ITALIAN STYLE) 
1 or 2 lg. baking fish
1 can tomatoes, most of juice drained
1 or 2 cloves garlic
1 onion, sliced
olive oil (about 1/3 cup, more or less)
oregano, parsley flakes, salt & pepper to taste
small amount of lemon juice

Mash tomatoes and spread over fish. Place onion slices and chopped garlic over fish.

Mix olive oil, small amount of juice from tomatoes and lemon juice together. To that mixture add oregano, parsley flakes and salt and pepper.

Pour over fish and bake at 325 to 350°F for 1 to 1/2 hours.

Note: If you want potatoes and carrots around the fish, parboil them first.
