OVEN-FRIED CHICKEN 
1 c. flour
2 tsp. salt
1/4 tsp. pepper
2 tsp. paprika
1/4 c. shortening
1/4 c. butter
1 cut up frying chicken

Heat oven to 425 degrees. Mix flour, salt, pepper and paprika in paper bag. Put shortening and butter in oblong pan, 13 x 9 1/2 x 2 inches and set in oven to melt. Shake 3 or 4 pieces of chicken at a time in bag to coat thoroughly. Place chicken skin-side down in single layer in hot shortening. Bake 30 minutes. Turn skin-side up and bake another 30 minutes or until chicken is tender.

For Lemon Barbecued Chicken - make Oven-Fried Chicken except after 45 minutes pour over Lemon Barbecue Sauce. Continue baking 15 minutes or until tender.

LEMON BARBECUE SAUCE:

Mash 1 small clove garlic with 1/2 teaspoon salt. Add and mix well 1/4 cup vegetable oil, 1/4 to 1/3 cup lemon juice (2 lemons), 2 tablespoons finely chopped onion, 1 teaspoon pepper and 1/2 teaspoon thyme.
