CREME PUFFS 
1/4 c. butter
1/2 c. boiling water
1/2 c. sifted flour
1/8 tsp. salt
2 eggs

Melt in small saucepan butter in the boiling water, add flour and salt at once. Stir constantly until ball of dough forms. Cool. Add eggs one at a time using electric mixer and beat until smooth. Drop by teaspoon amounts 1 1/2 inch apart on greased cookie sheet (smaller for appetizer size) Bake at 425 degrees for 15 minutes, then at 10 minutes at 325 degrees.

For crispier puffs, leave oven at 425 degrees the entire time. After 15 minutes, cut small slits in puffs; will dry out.

For Dessert:

Cut tops of puffs off. Fill with pudding, fresh fruit, canned pie filling, ice cream or whipped cream.

For Appetizer:

Cut off tops. Fill with seafood salad, flavored dip, cheese, etc.
