GOLDEN-CARROT-LEMON BARS 
1 c. shortening
1 1/4 c. sugar
4 eggs
1 c. mashed cooked carrots
2 c. flour
1 tsp. baking powder
1 1/2 tsp. vanilla
3/4 tsp. lemon flavoring

Beat sugar, shortening, eggs well. Add remaining ingredients. Mix well. Pour into prepared 15x10 inch pan. Bake 25 minutes, 350 degrees.

LEMON GLAZE:

2 1/4 c. powdered sugar
1/4 c. water
1 1/2 tsp. lemon extract

Spread on bars before they cool.
