JELLO FRUIT WHIP 
This is a great make ahead dish! Warning though - your friends and family will go crazy over it so make plenty!!!

3 pkgs. jello, any flavor (I use sugar-free strawberry)
2 1/2 cups boiling water
2 3/4 cups cold water
1 (15 oz.) can mandarin oranges in light syrup
1/2 (8 oz.) pkg. cream cheese, softened (I use low-fat)
8 oz. tub Cool Whip (I use low-fat)

Mix jello with hot water, then cold water. And then gently stir in oranges. Refrigerate for 3 1/2 hours or until little bit gelled.

Beat 1/2 package of cream cheese and Cool Whip together. Spoon into a large serving bowl, cover with gelatin mixture. Refrigerate for 2 hours or until firm.

Variation: For decoration, reserve some orange slices to place on top in whatever pattern you wish.
