BROWN SUGAR CHEESECAKE BARS 
7 graham crackers, crushed (I use Honey Grahams)
2/3 cup white sugar, divided
3 tbsp. butter, melted
2 (8 oz. ea.) pkgs. cream cheese, softened
1 tsp. vanilla
2 whole eggs
1 egg yolk

Preheat oven to 350°F.

Mix graham crumbs, 2 tablespoons sugar, and melted butter. Press onto bottom of 9-inch square baking pan.

Beat cream cheese, remaining sugar and vanilla with mixer until blended. Add whole eggs and egg yolk; mix well. Pour over crust.

Bake at 350°F for 30 minutes or until center is almost set. Cool completely.

Refrigerate for at least 3 hours before preparing topping.

TOPPING:

1/2 cup firmly packed brown sugar
1 tbsp. water

Heat oven broiler. Mix brown sugar and water; spread over chilled cheesecake.

Broil 6-inches from heat for 1 minute or until topping is hot and bubbly.

Serve warm.
