LEMON BREAD PUDDING | |
3 c. milk 3 c. white bread, broken in sm. pieces 3 eggs, separated 1 c. sugar 1/4 tsp. nutmeg 1 1/2 tsp. grated lemon rind 1/4 tsp. lemon extract Pour milk over bread and let soak at 20 minutes. Add slightly beaten egg yolks, 2/3 cup sugar, nutmeg and lemon rinds. Beat thoroughly in electric mixer bowl. Pour into buttered 1 1/2 quart baking dish. Place dish in pan of hot water in 325 degree oven for 1 hour and 20 minutes, or until slightly brown and pulling away from sides of dish. Make meringue by beating egg whites just until stiff. Add remaining sugar, 1 tablespoon at a time and continue beating until mixture holds a peak. Add the lemon extract and pile roughly on top of pudding. Return to oven at 350 degrees for about 15 minutes or until lightly browned. May be served warm or chilled. |
