MOM'S LEMON BREAD PUDDING 
2 c. scalded milk
1 c. bread cubes
1/2 c. sugar
2 beaten egg yolks
Grated lemon rind
2 egg whites
Scant salt
1 c. sugar
Juice of 1 lemon

Scald milk; add to sugar, bread, and lemon rind. Let stand 10 minutes. Add 2 egg yolks and beat thoroughly. Bake at 325 degrees until firm.

Meanwhile, add salt, 1 cup sugar, and lemon juice and mix. When pudding is baked, beat egg whites until stiff; add to sugar mixture. Spread on pudding and bake at 350 degrees until top is brown.
