BANANA TEA MUFFINS 
1 3/4 c. sifted flour (cake or other)
2 tsp. baking powder
1/4 tsp. baking soda
3/4 tsp. salt
2/3 c. sugar
1 egg, well beaten
1/3 c. melted shortening
1 c. very ripe bananas, mashed (2 or 3)

Sift flour, baking powder, baking soda, salt, and sugar into a large mixing bowl. Mix together egg, shortening, and bananas. Add to dry ingredients, mixing only enough to dampen flour. Turn into well greased muffin tins and bake at 400 degrees about 20 minutes or until done. Serve hot.
