BANANA SPLIT MUFFINS 
2 c. pkgd. biscuit mix
1/4 c. sugar
2 egg yolks, beaten
2/3 c. milk
2 tbsp. melted shortening
1/2 sm. banana
12 maraschino cherries, halved
12 walnut halves
2 egg whites
1/3 c. sugar
2/3 c. flaked coconut

Combine biscuit mix and the 1/4 cup sugar. Combine egg yolks, milk and the shortening. Add all at once to dry ingredients, stirring just to moisten. Put 1 1/2 tablespoons batter in bottom of greased muffin pan. Cut banana into 12 cubes. Place a banana cube, a cherry half and a walnut half atop batter. Cover with 1 tablespoon more batter.

Beat whites until soft peaks form. Gradually add the 1/3 cup sugar, beating until stiff peaks form. Fold in coconut. Place 1 1/2 tablespoons meringue on each muffin. Top with remaining cherries. Bake in 400 degree oven for 15 to 20 minutes. Makes 12 muffins.
