CRUNCHY BANANA MUFFINS 
2 over-ripe bananas, med. size
1/2 c. dark brown sugar
1/3 c. soft shortening
1 egg
1 tsp. vanilla
1 1/2 c. sifted all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/4 c. water
1/2 c. coarse chopped nuts

Mash bananas a little; add brown sugar, shortening, egg, and vanilla. Beat until mixed. Add flour, baking powder, soda, and salt; barely mix in. Add water and nuts; stir just enough to mix. DO NOT over-stir.

Spoon into 12 (2 1/2-inch) muffin cups.

TOPPING:

1/4 c. sugar
1/2 tsp. cinnamon

Mix topping together and sprinkle over top of muffins. Bake at 350 degrees for 25 minutes. Makes 12 muffins.
