STUFFED ARTICHOKES 
6 med. artichokes
1/4 c. grated Parmesan cheese
4 tbsp. olive oil
2 c. dry bread crumbs
Salt & pepper
2 cloves garlic, minced

Clean and prepare artichokes for stuffing. Combine bread crumbs, cheese, garlic, salt and pepper. Gently work the artichoke leaves apart to make room for stuffing. Stuff the bread crumb mixture between the leaves.

Place artichokes upright on a rack in 1 inch boiling water. Drizzle olive oil over each artichoke. Cover and cook until artichokes are tender, 45-60 minutes. Lift out carefully.

I don't know about you, but in my household the hearts are always being fought over, since in our opinion, these are the best part of the artichoke. So here it goes...

Step one is to cut off the stem at the base;how ever most recipes say to discard the stem. DO NO SUCH THING. Clean them and if they are really thick, just shave off the outer skin. Throw them in the pot with the chokes and allow them to cook right along with these tasty buds. In the end, the stems taste EXACTLY like the hearts!!!
