FRUIT PIZZA | |
1 pkg. yellow cake mix 1/4 c. butter 2 eggs 1/4 c. water 1/4 c. packed brown sugar 1/2 c. chopped nuts (optional) 1 (7 oz.) container whipped topping 1 pt. strawberries 1 can chunky pineapple 1 banana (peeled & sliced) Any type of fruit may be used. Line bottom of 2 round pizza pans ( or 1 large pan) with foil; grease and flour foil. Combine 1/2 of the dry cake mix, water, eggs, butter and brown sugar in bowl, mix thoroughly. Blend in remaining cake mix. Fold in nuts. Divide batter onto pan. Bake 14 to 20 minutes at 350 degrees. Cool, remove foil and spread Cool Whip on top. Arrange fruit as desired. To prevent fruit form turning brown, spread apricot glaze over top. APRICOT GLAZE: Heat preserves with water until dissolved. Remove from heat and cool slightly. Strain preserves and then use the clear glaze by brushing it on the fruit. |
