FRENCH APPLE CAKE 
1 1/2 c. Crisco oil
2 c. sugar
3 eggs
2 tsp. vanilla
3 c. flour
3 c. diced apples
1 tsp. baking soda
1 1/2 tsp. salt
1 c. chopped pecans
1 c. raisins

Blend very well the oil and sugar. Add slightly beaten eggs and vanilla. Sift together the flour, salt and sugar. Mix together the apples, raisins and nuts in 1 cup of the flour mixture.

Add dry ingredients to the creamed mixture. Add the coated apples, raisins and pecans. Grease a tube pan and line the bottom with brown paper. Bake at 325 degrees for 1 hour and 45 minutes. Leave in the pan.

GLAZE:

1 tbsp. vanilla
1/2 tsp. baking soda
1 stick of butter
1 c. sugar

Combine ingredients in a saucepan. Bring to a boil and boil for about 4 minutes. Stir constantly. Spoon over the top of the hot cake letting the glaze soak in. Let soak for several hours or overnight.
