NELLY'S ZUCCHINI RELISH | |
2 qts. ground zucchini 4 med. onions, ground 2 lg. green peppers, ground 1/4 c. salt 2 1/4 c. sugar 2 1/4 c. white vinegar 1/2 tsp. ground cloves 1 tsp. turmeric 1 tsp. dry mustard 1 tsp. celery seed 1 tsp. mustard seed Leave skins on zucchini, scrape seeds out. Mix zucchini, onions, peppers in kettle. Mix salt with just enough water to dissolve. Mix with enough water to cover vegetables. Pour over vegetables. Let stand 3 hours. Drain well. Mix remaining ingredients in kettle. Add zucchini mixture; mix again. Boil 5 minutes. Place in hot sterilized jars. Seal. Process in boiling water bath 10 minutes. 4-5 pints. |
