LEMON DELIGHT POUND CAKE | |
CAKE: 2 1/2 c. flour 1 1/2 c. sugar 3 tsp. baking powder 1/2 tsp. salt 3/4 c. orange juice 3/4 c. cooking oil 2 tsp. lemon extract 4 eggs GLAZE: 1 1/2 c. powdered sugar 1/2 c. lemon juice Combine all cake ingredients; beat 3 minutes at medium speed. Generously grease (NOT oil) and flour a 12 cup bundt pan or tube pan. Pour into prepared pan. Bake at 325 degrees for 40 to 50 minutes or until toothpick inserted into center comes out clean. Remove cake from oven. Prick deeply every inch of cake top with fork. Blend Glaze ingredients until smooth. Spoon half the Glaze over hot cake in pan. Let stand 10 minutes; invert onto a serving plate. Spoon remaining Glaze over cake. Have the coffee ready! Excellent cake to take to a friend or family gathering. Easy to make. |
