SWEET POTATO FRIES 
1 lb. sweet potatoes
1 egg white
2 tsp. chili powder
1/4 tsp. garlic powder
1/4 tsp. onion powder

Peel and cut potatoes into 1/4 inch by 1/2 inch strips. In a bowl, combine egg white and seasonings; beat well. Add potatoes; toss to coat. Place in a single layer on two baking sheets coated with nonstick cooking spray.

Bake, uncovered, at 450°F for 20-25 minutes or until golden brown.

Yield: 8 servings. One 1/2 c. serving equals 40 calories, 20 mg sodium, 0 cholesterol, 9 gm carbohydrate, 1 gm protein, trace fat. Diabetic Exchange: 1/2 starch.
