GRANDMOTHER HINCKLEY'S BLUEBERRY
MUFFINS
 
This recipe is from Maine and is over 150 years old.

3 tbsp. butter
2/3 cup sugar
1 egg, beaten
1/2 cup milk
1 1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 to 1 1/2 cups blueberries

Cream together butter, sugar. Beat in egg. Add milk.

Whisk together flour, baking powder and salt.

Fold in 1 to 1 1/2 cups blueberries. Turn batter into greased muffin pan (12 cup).

Bake in a preheated 350°F oven for approximately 25 minutes.

While still warm from oven, brush with melted butter and sprinkle with coarse sugar.

Makes 12 regular sized muffins.

I made this recipe today as a bread and I think I have died and went to heaven. This is by far the best blueberry muffin (or in my case bread) that I have ever eaten. I fully intend to make it regularly as well as use the basic recipe with different berries. Thank you to Grandmother Hinckley whoever you are.

These are fantastic!! I added a sprinkle of cinnamon sugar on the tops before baking and it added a pleasant crunch. Definitely a keeper recipe.

GREAT... Only comment is I used xlarge muffin pans so I would have to triple the recipe to make 12 muffins... Absolutely worth the time!!!

I have been baking these regularly for about a year. Often I need to add a little more liquid, usually milk or preferably cream. I tried making 9 larger muffins with the same amount of batter, but they do not come out as tender. (I wanted them bigger because adult male sons swoop in, grab two, one goes whole directly in the mouth, and the other close behind... and a mumbled "Later") Ugh. I thought bigger might get them to sit.. Not! Great muffins just as they are... Later!
