GRANDMOTHER HINCKLEY'S BLUEBERRY
MUFFINS
 
This recipe is from Maine and is over 150 years old.

3 tbsp. butter
2/3 cup sugar
1 egg, beaten
1/2 cup milk
1 1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 to 1 1/2 cups blueberries

Cream together butter, sugar. Beat in egg. Add milk.

Whisk together flour, baking powder and salt.

Fold in 1 to 1 1/2 cups blueberries. Turn batter into greased muffin pan (12 cup).

Bake in a preheated 350°F oven for approximately 25 minutes.

While still warm from oven, brush with melted butter and sprinkle with coarse sugar.

Makes 12 regular sized muffins.

NOT good .... I'll be forced to make several batches! ... they won't last very long ;). I'd never made blueberry muffins from scratch before. I wouldn't change a thing. They are WONDERFUL!

These are sooo good, and soooo easy!! I only add vanilla. You can add half the flour measurement of some healthy flour, whole wheat, etc. The coarse sugar on top is a nice addition. I love these, and so do my husband and kiddos. :-)

Amazingly simple and delicious blueberry muffins. I think it's a given that the butter is softened (room temperature). My batter was silky smooth and perfect. I added 1/2 tsp. of vanilla and it made exactly 12 heavenly muffins!

This is now my "go to" muffin recipe! I have made it many times with different fruit variations and they've all been great! Apples, mandarin oranges, blueberries, pineapple, raisins, cranberries...And simple enough to commit to memory :) Now we can have muffins anytime, not just when I remember to buy a box mix at the store! The kids LOVE this :)

Great recipe that's easy and comes out moist!!! Some recipes call for too much flour and you have hard and dried out muffins! This is perfect and my new go to Maine recipe!!

I expected to make one batch, turned out so scrumptious, I had to make 2 more batches! And gave 1 to brother! Anyone who's saying this recipe isn't good can't possibly know how to bake! A good baker would use any recipe as inspiration to make it ones own! And as I did. Not bragging at all either! I read these negative comments and its like hey it would have come out good if you knew what to do to make the recipe good. This was a great one for me as my hubby had asked a while ago to make blueberry muffins! Didn't make much change except followed the one who said to use vanilla and brown sugar. Exceptional I have to say!!!
