EASY SOUTH TEXAS RICE
(STOVE-TOP)
 
3 cups long grain brown rice
3 tbsp. Knorr Caldo con sabor de Pollo (seasoning)
1 16oz bottle Pace (picante) chunky salsa, mild
1/2 cup of vegetable oil
2 1/2 cups of water (& 1/2 cup extra)
3 strands fresh cilantro
1 tsp. minced garlic (optional)

Pour the oil in a deep pan on the (stove-top) Heat on medium until hot, then add the rice and let brown or fry for a few minutes. Pour the water into the rice when the desired color is met (Be careful of splattering.)

Next, pour about 8 oz or half the Pace into the rice and water. Add the Knorr Caldo de pollo and mix until evenly dissolved. (The minced garlic may be added if desired in this step). Heat to boiling, then cover and simmer on low for 25-30 minutes.

Frequent stirring not required, only check to make sure the rice is still moist until done cooking, adding more water if necessary. In the last 5 minutes of cooking time, pull cilantro leaves from stems and place on top of rice, re-cover the rice. When done, cool 10 minutes uncovered and serve, store leftovers in the refrigerator.
