SMOKED FISH 
Salt water, enough to float an egg
Brown sugar
Fish, cleaned and filleted

Soak fish overnight. Rinse and dry. Rub brown sugar all over fish. Put on pan and place in oven 1/2 hour at 250 degrees. Place pan on rack in smoker. Smoke 2 1/2 to 3 hours.

Note: Put foil on bottom of oven as this drips when baking.
