MINESTRONE SOUP | |
3 lb. beef 4 leaves parsley 1 large onion, chopped 1 can crushed or whole tomatoes 1/4 lb. spaghetti noodles, broken 1 pkg. cut frozen string beans 4 qt. water 4 large carrots, chopped 2 stalks celery, chopped 1 bay leaf 2 c. chopped cabbage 1 can chickpeas 1 pkg. frozen peas salt and pepper to taste In water, put beef, carrots, parsley, celery, onion and bay leaf and simmer, uncovered, for 3 hours. Remove beef and carrots and strain. Combine remaining ingredients. Cook, covered, for 45 minutes. Cut up beef in small pieces. Makes 3 1/2 quarts of soup. |
