SWEDISH FRUIT SOUP | |
1/2 lb. prunes 1/4 lb. dried apricots or 1 can 1 c. white raisins 1/3 c. lg. tapioca 1/2 c. sugar 3 apples, peeled and diced 1 lemon, sliced 1 stick cinnamon 1 or 2 oranges, peeled and sliced 1 1/2 c. frozen cherries or 1 can cherries Soak dried fruits and tapioca overnight. In morning, combine all ingredients except cherries in 2-quarts water and cook until fruit is soft. If soup is too thick, add more water or grape or orange juice. You can use a box of dried mixed fruit. The soup can be served hot or cold. It is very good served cold with cream or half and half. |
