SWEET POTATO ROLLS 
1 c. milk
3/4 c. sugar
1/2 c. butter
1 c. mashed sweet potato
2 yeast cakes
1/2 c. warm water
1/2 tsp. salt
1 egg
1 c. flour
4-5 c. additional flour

Scald milk, add sugar and butter until melted. Stir in sweet potato, let cool. Dissolve yeast in water. Beat egg and add to cooled mixture, add salt and 1 cup flour. Put in bowl and let rise until full of bubbles. Add remaining flour to make dough.

Let rise again or can be refrigerated. Roll dough and cut with biscuit cutter. Put butter and a little sugar in the center of the roll. Fold in half and press so will stay together. Bake at 400 for 20 minutes. Butter top as soon as comes out of oven.
