SWEET POTATO ROLLS 
1 c. mashed sweet potatoes
2 yeast dissolved in 1/4 c. warm water
2 eggs
2/3 c. shortening
2 tsp. salt
1/2 c. sugar
1 c. potato water
8 c. sifted flour

Use canned sweet potatoes (if desired). Add salt, sugar, mashed potatoes. Add shortening and mix well. Add eggs and continue mixing. Add yeast and potato water. Gradually add flour until you can't mix with spoon. Then knead until it no longer sticks to fingers.

Let rise about 4 to 5 hours. Place biscuit size rolls on greased baking sheet. Let rise again. Bake 400 degrees for 12-15 minutes. Makes about 5 dozen.
