INDIVIDUAL MEAT LOAVES - POT
ROASTED
 
1 1/2 lbs. ground round
1 egg
1 c. soft bread crumbs
1 onion
2 tbsp. Crisco
1/2 c. boiling water
1 1/2 tsp. salt
1/4 tsp. pepper
3/4 c. tomato juice
2 tbsp. flour
2 med. onions & parsley
2 tbsp. chicken stock

Mix as for meat loaf, form into small loaves, roll in flour and brown in fat. Remove fat from skillet and arrange loaves on top. Dissolve chicken stock in boiling water. Pour over meat. Simmer 30 minutes, covered. If it looks a little dry, add a bit of water.
