ZUCCHINI CASSEROLE 
3 c. rye bread
1 stick butter
4 c. cubed zucchini
1 med. onion, chopped
1/2 green pepper, chopped
3 med. tomatoes, cut up
1/2 lb. low fat Cheddar cheese, cubed
Salt and pepper to taste

Saute bread in butter. Place half of bread in 9 x 13 inch pan. Stir remaining bread and remaining ingredients together. Put over bread in pan.

Bake in 350 degree oven for 45 minutes covered, 15 minutes uncovered.

Serves 12.
