HOT WATER PIE CRUST 
1 c. lard, very soft
1 tsp. salt
1/2 c. boiling water
3 c. all purpose flour

Place lard and salt in a large bowl. Beat until lard is softened. Pour boiling water over the lard and blend again. Let this mixture cool to room temperature. Stir in the flour and form into a ball. If you use your hands, do it quickly. Chill for several hours or overnight. Then let the cold dough sit out at room temperature for about 30 minutes before rolling out. This recipe freezes well.
