SPICY GINGER - GARLIC CHICKEN 
4 cloves garlic, minced
1 1/2 tsp. grated ginger root
1/2 tsp. salt
1/4 to 3/4 tsp. ground red pepper
1/4 tsp. black pepper
8 skinless boneless chicken breast halves
1/4 tsp. cinnamon
1/4 tsp. ground cardamom
1 tbsp. catsup
1 tbsp. red wine vinegar
1 tsp. water

In a small bowl combine garlic, ginger root, salt, red pepper, black pepper, cinnamon and cardamom. Stir in catsup, vinegar and water. Brush both sides of each chicken breast with garlic mixture.

Place chicken in a shallow baking pan. Bake uncovered in a 375 degree oven for 45-55 minutes or until no longer pink. Makes 8 servings.
